Somewhere along the way, we collectively decided that loving chocolate meant accepting consequences. Blood sugar spikes. Artificial ingredients. The discomfort and guilt that follows indulgence. But chocolate doesn't have to mean compromising health.

The Kitchen Where It All Started

We started Delessa in a kitchen, not a lab. While others have been engineering "solutions" with erythritol and resistant dextrin, we never strayed from the basics: what if chocolate could be inherently good for you?

We respect our product "cousins" in the clean chocolate space. Many use wholesome ingredients like dates, honey, and coconut sugar. They're doing important work supporting movement away from processed junk. But even these natural sweeteners don't work for everyone managing blood sugar, following ketogenic lifestyles, or dealing with specific health conditions.

The Real Problem Nobody Talks About

Everyone remembers Nutella—delicious, sugary, spreadable joy in a jar. But as we've learned more about sugar's impact on both kids' and adults' health, that childhood favorite doesn't fit our evolved understanding of wellness. Chef Stef created Delessa to satisfy those same nostalgic cravings while actually supporting long-term health goals. Our raw, vegan approach doesn't just eliminate problematic ingredients—it satisfies those pesky cravings without the sugar rollercoaster that leads to wanting more.

The chocolate industry—even the "healthy" part—still operates on the assumption that good chocolate requires some kind of health compromise. Either you accept sugar (natural or otherwise), or you accept artificial substitutes. Either you get great taste, or you get clean ingredients.

This false choice frustrated us as consumers long before we became chocolate makers.
