Why We Created Delessa

I was tired of reading ingredient lists that read like chemistry experiments, especially in products marketed as "healthy alternatives." I'd looked at what was already out there — carob, alternatives sweetened with dates or agave, even the chemical-laden "diabetic chocolate" sold as a solution. None of it worked. My original recipe came together in a flash of inspiration, not endless testing. I started with real, whole foods in my own kitchen — and never found anything that beat it.

The Beginning

I'm Chef Stef, and almost 20 years ago, I came up with my first chocolate blend as a matter of survival - sugar-free raw vegan chocolate spread. There were too many temptations everywhere I turned, and I had to come up with something delicious and satisfying that would help me stay away from sugar, gluten, and junk food. My family lovingly nicknamed it "chocolatella," and I spent years making it with very little adjustment - not only for myself, but also for friends and family.

After some shifts in the market and encouragement from those who've experienced my creations, friends and family convinced me to start Delessa and share it with fellow chocolate lovers who refuse to compromise. When I started firming up my blends for commercial production, I sampled dozens of producers of my four simple ingredients before landing on the ones that met my standard (and tasted the best). In 2020 we started to put it all together, and we launched in 2022, successfully funding our first productions via Indiegogo.
